About
the wine
A powerfull and full bodied red wine made from 70% Grenache, 20% Syrah
and 10% Cinsault from 60-75 years old vineyards, made by the
topproducer Roger Sabon from Chateauneuf du Pape. Cuvee
Réservé is one leap forward from the Les Olivets as the
grapes are originating from older vines.
After vinification the wine ages in large oak casks for about 10-12
months. After bottling the wine ages some months in bottle for extra
refinement.
Pairs very well, with all kinds of red meats, wild boar, roast suckling
pig and strong seasoned dishes. Drinktemperature is 16-17° C.
Drink until 12 - 18 years after the year of production.
About the
producer
The Sabon
family has a long history in Chateauneuf du Pape. Quote from the
homepage of the domain: "One of the oldest documented landholders in
Chateauneuf du Pape, the Sabon family has controlled vineyards in the
zone since 1540". Roger Sabon is the father of the three brothers who
run the domain today Jean-Jacques, Denis and Gilbert Sabon.
The vinification is since 2001 in the care of Didier Négron,
son-in- law of Jean Jacques Sabon. Denis and his son Julien take care
of the fields. Delphine, daughter of Denis is often in the reception.
Today the property has 15 ha. in AOC Chateauneuf du Pape and owns a
property of 17 ha. in the Lirac area from where they produce Lirac and
Cotes du Rhone.
